Here's a recap of our summer bounty.  We really enjoyed this season.  Despite the trials, they were months of great fruitfulness and although we welcome the cool fall weather, we will miss the abundance this year's summer garden has produced.  We did more canning than we've ever done in our life, and pickled more vegetables than we thought possible!  The Lord's mercies endure forever.

We harvested our beets in May and made beet relish for the first time.

To make our tomato sauce this year, we roasted the tomatoes with carrots and garlic,
pureed them together, and processed in a boiling water bath.
